APPLICATION
Used as a food additive and rheology modifier;  it is very stable under a wide range of temperatures and pH; used in oil industry to thicken drilling fluid; in cosmetics, used to prepare water gels; acts as an emulsifier in foods; used as a substitute for wheat gluten in gluten-free breads, pastas, and other flour-based food products.
